Chicken Stew

One of my absolute favorite dishes, the Spanish name for it is Pollo Guisado, and it is so good. It is typically made much heartier, with a lot more salt, huge hunks of potato and standard bone in chicken. But, as always, I try to make my favorite dishes a bit healthier! On to the food!!

What you'll need:
1.5 to 2lbs of chicken (I used boneless skinless breasts but majority of people love it with bones)
1/4 of a medium yellow onion
2 stalks of celery
1/4 green pepper
1/4 red pepper
2 tbs of olives
1/4 packet of Sazon
cilantro, oregano, adobo and pepper, sugar to taste

Season with Adobo, Oregeno and Black Pepper to taste
Add onion and celery
Marinate for 30+ minutes
Brown some sugar with vegetable oil
Brown both sides of the chicken
Add two tablespoons of water and cook for 10 minutes.

Add reserve veggies and the pepper and two more tablespoons of water and cook for another 10.
Add additional vegetables (I like to use potatoes and carrots but this time I didn't have either so I just chopped up some zucchini), 1/4 packet sazon, cilantro, olives, three-four tablespoons of tomato sauce and 1/2 - 3/4 cup water (however much it takes to nearly cover your food.
Simmer for at least 20 min

And here's the finished product! Me and my boyfriend love this stew and usually eat it over brown rice, but if you add potatoes you don't even need rice! It literally tastes good with any vegetable you try! I'd love to know if you try it and if you enjoy it! Have a great day guys!! ♥

Chicken Sausage and Peppers | Budget & Diet Friendly

As I'm skipping through the wonder years of my 20's I often find myself at a road block question. Is it who am I, or what do I want with my life? Nope, it's what the hell can I eat for $5?! Add on trying to be calorie conscious and you have quite a challenge. Here's one of my options, that is quick, easy and CHEAP. I spent $5.21 for a one person meal but factoring in that Clint forgot his rewards points card and peppers are often on sale, it could get even cheaper! If you double the meal for make it for two, you'll surely still be under the $10 mark! As for calories, this carb free meal is only 351 calories! I haven't added rice, but two whole peppers and half an onion do their part to keep you full!

Here's what you need:
Photobucket Pictures, Images and Photos
2 Spicy Italian Chicken Sausage(mine is from Trader Joes, a 4 pack for $3.99)
1 Green Pepper
1 Red Pepper
1/2 Red Onion

Step 1: Add the chicken sausage to the pan to brown while you start preparing your peppers and onions in thin slices.

Step 2: Add your peppers and onions to a separate pan to cook. Cook until the peppers are mildly softened!

Trinacooks: Turkey Chili

Something I haven't spoken about yet on my blog. I love to cook and bake. It puts such a big smile on my face when I cook for my boy and he tells me loves it.

However as me and the boy are on the path to healthier lifestyles, I've been toying around with healthier recipes for us to eat. That is not to say all of the recipes I post will be healthy. I do indulge every now and then.

I've been trying chili recipes for a while and I finally figured out a recipe both me and Clint(the boy) love, and its so easy to do! If you aren't a fan of turkey, this works with ground beef, chicken or substitute!

Photobucket Pictures, Images and Photos

What you'll need:
1 & 1/2 teaspoons olive oil
1 to 1- 1/4 pounds ground turkey
1 onion, chopped
1 &1/2 cups water
1 (28 ounce) cans canned crushed tomatoes
2 (16 ounce) cans of canned beans(your choice, I use black and pinto) - drained and rinsed
1 tablespoon garlic, minced
2 tablespoons chili powder
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1teaspoon salt
1/2 teaspoon ground pepper

*NOTE* if you like mashed beans in your chili then mash one can and leave the other as is.

After you've chopped your onions, you should add that, the ground turkey and your garlic to the pan with olive oil and cook until the turkey is fully browned. It should look like this:

After that, add ALL the rest of your ingredients and bring to a boil, and then turn the heat to low and let it simmer covered for 40minutes - however long you want(the longer the juicier and delicious your chili will be, but its perfect at 40!)

And then you're all done! Finished product(over trader joes 3 minute brown rice, more on that another time):
